Puppy Day! We had the two cutest puppies, Kasey and Kelsey from the KY Humane Society visit our team in Louisville. In this video, you will see their sweet faces giving all the snuggles and kisses to make our Friday even better. Join us this year to splash, dash, walk or run in support of Norton Children’s Hospital!
Choose a designated 1K or 5K distance with a scenic view of E.P. “Tom” Sawyer State Park. Whether you choose to splash or dash, your support is making a difference for the more than 215,000 kids who need care at Norton Children’s facilities each year.
Race start times vary based on selected course. Register by Aug. 1 to guarantee you’ll receive an event T-shirt. For registrations received after Aug. 1, T-shirts will be available on a first-come, first-serve basis while supplies last. Registration fees will increase by $5 on race day.
1K COURSE Race starts at 9 a.m. // Waves will start every 10 minutes until last wave at 11:30 a.m. $25 for adults, $20 for kids ages 5 to 17
5K COURSE (NONCOMPETITIVE) Race starts at 8:30 a.m. // Waves will start every 10 minutes until last wave at 10:00 a.m. $30 for adults, $20 for kids ages 5 to 17

SUMMER ROLLS
Dipping Sauces
Vietnamese Dipping Sauce
- .25 cup fish sauce
- .25 cup sugar
- .3 cup water
- 2 T lime juice
- 2 T rice wine vinegar
- 1 tsp garlic finely diced
- 1 T shredded carrot
- 1 tsp sriracha
Hoisin Dipping Sauce
- .5 cup hoisin sauce
- 4 tsp sugar
- 4 tsp water
- 4 tsp lime juice
- 1 T chopped peanuts
Peanut Dipping Sauce
- .25 cup peanut butter
- .25 cup water
- 1 T hoisin sauce
- 1 T lime juice
- 1 tsp brown sugar
- 1 T chopped peanuts
- 1 T sriracha
Summer Rolls o Rice paper wrappers
Shallow pan or plate with scant .5” water o Fillings:
- Protein: • Chilled cooked chicken, shrimp, pan fried tofu, pork, beef • Etc!
- Veggies: • Shredded carrots, thinly sliced bell peppers, thinly sliced red onions (or pickled onions!), shredded leafy greens, thinly sliced cucumbers • Etc!
- Flavor: • Fresh herbs, such as: mint, basil, cilantro, parsley, Pickled ginger, wasabi, sriracha, Kewpie mayo, wedges of lemon, lime or orange
- Fun stuff: • Rice vermicelli, cooked, rinsed, drained, and chilled
- Edible flowers
Dip a sheet of rice paper into the water for a few seconds, and remove to a cutting board -the rice paper will still be stiff, it will soften as it continues to hydrate.
Arrange fillings into bottom half of the rice paper wrapper. Filling should occupy about 3” in length and 1.5” in width. Top with any flavor options you choose.
Fold bottom of the rice paper wrapper over the top of the fillings, then fold in the sides. Roll fillings over to the open edge of the rice paper wrapper, fairly tightly. Wrapper will adhere to itself.
Cut into halves and serve immediately with dipping sauces.
Chef Note: Let children choose their veggies, and assist with prep work. Even very young children can help wash produce, gather measuring cups and spoons, take scraps to the compost or trash can, etc. Advance to supervised slicing when the child is ready for more responsibility. All recipes can be adjusted for taste, or to tone down the heat. When it is really hot outside, opt for grilling rather than cooking indoors. Lastly, there is absolutely no shame in buying a precooked rotisserie chicken, precooked shrimp, or frozen sliced beef strips!
